
Recipe for Crab Stick Salad with Sesame Mayo

Boil Crab Sticks for 2 minutes, drain and shred lengthwise. Toss with julienned cucumber, lettuce, and sweet corn. Whisk mayonnaise, a little soy sauce, and sesame oil as dressing, pour over the salad and serve chilled.

Ingredients
- 250 g crab sticks, shredded
- 1 Japanese cucumber, julienned
- 1 carrot, julienned
- 4 tbsp mayonnaise
- 1 tbsp sesame oil
- 1 tsp soy sauce
- 1 tsp sugar
- 1 tbsp toasted sesame seeds
Method
- Thaw the crab sticks in the fridge, then shred them lengthwise by hand.
- Salt the cucumber lightly, rest for 10 minutes, then squeeze out the water. This stops the salad going watery.
- Whisk the mayonnaise, sesame oil, soy sauce and sugar together.
- Fold the crab, cucumber and carrot through the dressing.
- Chill for at least 20 minutes and scatter sesame seeds before serving.
Tips
- Hand-shredding beats knife-cutting for texture.
- It keeps a day in the fridge, though the cucumber is crispest early on.
