Saute diced smoked beef until slightly crispy. Toss cooked pasta with an egg cream and parmesan sauce over low heat to prevent clumping. Add the smoked beef and a dash of black pepper before serving.

Ingredients

  • 200 g spaghetti
  • 100 g smoked beef, cut into strips
  • 2 whole eggs + 1 yolk
  • 60 g grated cheese
  • 2 garlic cloves, bruised
  • Coarse black pepper
  • Salt for the pasta water

Method

  1. Boil the spaghetti in salted water until al dente. Save a cup of the cooking water.
  2. Beat the eggs, yolk, grated cheese and plenty of black pepper in a bowl.
  3. Fry the smoked beef with the garlic until the edges crisp, then discard the garlic.
  4. Turn off the heat. Add the hot pasta to the pan and toss it through the rendered fat.
  5. Pour in the egg mixture while tossing constantly. The heat must be off — the pasta alone cooks the egg.
  6. Loosen with pasta water a little at a time until the sauce is glossy and coats the strands. Serve at once.

Tips

  • Scrambled egg means the pan was still too hot. Take it off the stove before the eggs go in.
  • Pasta water carries starch; that is what binds the sauce, so do not tip it away.
