
Potato Croquette Filled with Cheese and Beef Bacon Recipe

Mix mashed potato with minced beef bacon and grated cheddar cheese. Shape into ovals, coat with breadcrumbs, then fry until golden. Serve warm with mayonnaise sauce as a snack.

Ingredients
- 600 g potatoes, steamed and mashed
- 100 g beef bacon, chopped and fried
- 100 g mozzarella, diced
- 2 tbsp flour
- 1 egg, beaten
- 150 g breadcrumbs
- Salt, pepper and nutmeg
- Oil for frying
Method
- Mix the mashed potato with flour, beef bacon, salt, pepper and nutmeg.
- Flatten a spoonful, place a cube of mozzarella in the middle, and seal it completely.
- Chill for at least 20 minutes. Cold croquettes do not burst in the oil.
- Roll in beaten egg, then in breadcrumbs.
- Fry at 170 °C until golden, about 3 minutes.
- Drain on a rack and serve warm while the cheese is still molten.
Tips
- Leaking cheese almost always means a poor seal or no chilling.
- Croquettes freeze well once breaded, and fry straight from frozen.
